Duncan Elphick, then General Manager of Speyside’s Craigellachie Hotel was our final ‘on-trade’ guy but, most magnanimously, he handed over to his right hand man, whom he considered the better ‘nose’. Duncan and Tatsuya are globe-trotting ambassadors for Speyside and her whisky and now proud owners of their own hotel, the charming Highlander Inn.
